Wholemeal Flour - Uses, Nutritrional Information and Recipes

Wholemeal flour (known as whole wheat in the US) refers to flour that uses the whole grain of the wheat, with nothing removed, whereas white flour undergoes a refining process.

Wholemeal flour is often referred to as a 100% extraction flour, because the whole of the wheat grain is used. In contrast, white flour is produced using about 75% of the grain and brown flour uses about 85% of the grain.

Wholemeal flour is higher in fibre and protein, packed with vitamins and minerals and is particularly popular with the health conscious, looking for a more ‘natural’ product.

Marriage’s produce three wholemeal flours, which are suitable for bread machines and baking by hand:

Strong Stoneground Wholemeal flour

A special flour ground in the traditional, slower way between Marriage’s French Burr stones, rather than the modern steel roller mill process. Nothing is added or removed from this nutritious flour, giving a delicious nutty flavour. Ideal for tasty rolls and bread, especially with the addition of fruit or nuts and seeds
