TEST BAKING: FOCACCIA

We’ve been baking focaccia this week in the test bakery. Here’s a quick run-down of the process:

- We add the biga to our focaccia dough ingredients - ready for bulk fermentation.
- After the first rest, we prep in the tray and rest again!
- Then dimple, further rest and then top with olives
- After the final prove it’s ready to bake!
